BBQ Salmon with Sun-Dried Tomatoes and Fresh Herbs

Ingredients:

  • 5 garlic cloves
  • crushed 1/4 cup fresh parsley
  • chopped 1 tbsp fresh basil
  • chopped 1/4 cup sundried tomatoes packed in oil
  • teaspoon salt
  • 1/4 cup oil from sundried tomatoes
  • 3 lb salmon fillet

Instructions:

Combine garlic, parsley, basil, tomatoes, salt and oil. Set aside. With very sharp knife, cut hatched slits in fillet. Cut to the skin, but not through it. Spread garlic/tomatoe mixture over fillet and into the slits. Cook on BBQ for 15 mins, or until done.
