Killer Coho Burgers with Lime Aioli


  • 1 1/2 lbs skinless Coho Fillets
  • 1/2 cup toasted sesame seeds
  • 2 green onions
  • 4 Tbs Sambal Oelek (Chilli paste)
  •  1 cucumber
  • 4 buns
  • 1 Lime
  • Fresh ground black pepper & sea salt to taste

Aioli Ingredients:

  • 1 cup Real Mayonnaise
  • 1 Lime
  • Fresh ground black pepper & sea salt

Cooking Instructions: First,toast the sesame seeds in a dry frying pan – this is the ONLY tricky part of this recipe! Sesame seeds go from toasted to burnt really quickly so pay attention. Roughly chop the Coho & green onions. Place all the ingredients in a food processor and “pulse”a couple times until combined (if you don’t have a processor you can use your hands) Using your hands form the salmon into burger patties.Season with salt & pepper. In a frying pan with a little vegetable oil ,on medium high heat,cook the burgers about 5 mins each side. While the burgers are cooking combine the mayonnaise with 2 Tbls lime juice and 1 Tsp lime zest add a pinch of salt and a good amount of fresh ground pepper. Slice the cucumber thickly (this adds crunch and texture to the burger) Place a little Aioli on the bun (top & bottom) place the burger on, add a little aioli on top of the burger then 3 slices of cucumber – cap it and your good to go! ENJOY!!
